Tags allow you to organize people around keywords that make sense to you. For example, you could add a tag called "Lead" and then tag everyone who's a lead as "Lead". Clicking on the Lead tag would then list everyone who has been tagged Lead. Other tag examples include "Vendor" or "Press" or "Client" or "Investor" or whatever else you'd like.

No. Each person in Highrise can only be part of one company at a time. You can change the company they are attached to by clicking the "Edit this person" link on their page.
Then enter a different company in the "Company" field.
To delete a person, go to their page and click the red "Edit this person" link in the blue header bar.

Then click the "Delete this person" link in the sidebar.

When you delete someone the notes attached to that person's page are deleted as well. You can't keep notes if the person those notes were about was deleted.
Yes, Highrise lets you merge duplicate contacts. How it works: You need to choose which of the person's pages will be the "loser" of the merge. The notes, emails, and files from that page will be copied over to the "winner" (which you'll choose). The "loser" will then be deleted.
Choose which of the person's pages will be the "loser" and click the "Edit this person" link on that page.

Then look in the sidebar for the "Is this a duplicate?" section.

Now choose the "winner" (the person you want to keep) and click the "Merge these people" button.

You can repeat this process as many times as needed.
Yes, you can tag multiple people at once. You can also tag people you've imported. This video will show you how it works.
You can do this by giving each contact you want on the mailing list the same tag and then exporting the list.
Here's how: Tag each person you want on the list with a unique tag (for example: "email_list"). There are two ways to do this: 1) Go to each person's contact page and add the tag to that person (click the "Add tags" or "Edit tags" link under the contact's name). 2) Go to the "Contacts" tab and select the checkbox next to any name you want to add to the list. Then click the "add tags" link that shows up at the top of the screen. (This video will show you how tagging multiple people works.)
Then, click the "Tags" tab and click that specific tag to bring up all contacts on your list. Then click the "Export" link in the sidebar. Choose the format you want and save the list. You can then import this list into the application that you use to send group emails, create mailing labels, etc.
First, select a single tag:
The tag you clicked will be selected (bold). Then you'll see a "Multiple tags" link in the top right corner of the tag section:
Click the "Multiple tags" link. Then click another tag:
You can click as many tags as you want. The results are shown as the intersection of all the tags selected. It's "Investor" and "VC", not "Investor" or "VC".
The left side of the screen will reflect the tags you selected:
If you ever want to clear the selected tags and start over just click the red "Start over" link in the top right corner of the tag section once you've selected more than one tag.
Click any tag then click the red "Rename tag" link in the blue header on the tag page. You can then rename the tag. The new tag will be applied to everyone who had the old tag.
One you add a tag to your account, it will always be listed in your list of tags, even if it's not being used on a contact. You can't delete tags, but you can remove them from your contacts or rename them.
The dates to remember feature lets you keep track of important dates for each contact. You can add their birthday, anniversary, date hired, date fired, date granted a promotion, or whatever other date you want.
How it works

You can pick a standard date type (birthday, anniversary, etc) from the pulldown or select "Other" and you can add your own. Pick the date, the year ("every year" if it repeats like a birthday), and if you want a task set a week before the date.
You can add as many dates as you'd like. Here's an example of three dates added for one person:
